We were delighted to host an event recently for the AA Hotel Services Group. The two day course comprised of an AA Food and Beverage Service Academy and an AA Rosette Academy. Restaurant owners, Front of House Staff and Chefs from around the Bristol region attended the course and were instructed on what AA Inspectors are looking for when awarding their prestigious AA Rosette Awards for restaurants.
On day one of the course, delegates were educated on a range of subjects including the relationship between cheese and wine, the variety of teas and coffees available, the how’s and wherefores of breads and the importance of seasonality and locality. Delegates had the opportunity to taste a variety of foods and had to try to indentify the types of breads, olives and cheeses they were given.
Time was also taken to examine how best to handle customer complaints but, more importantly, how to keep your customers happy in the first place.
Day two had our own Chef, Ben Halliday, (pictured above), doing the cooking! Ben had to prepare tasting dishes including omelettes with various herbs for the delegates to identify and mashed potatoes with different flavourings for blind tastings.
Perhaps the most tricky task of all, Ben was asked to produce a range of dishes purposefully making mistakes in each dish which the delegates then had to comment upon. Of course Ben also had to then produce a perfect dish so they could taste and see the difference – which of course Ben did superbly!
